Beschreibung

Increasing food waste is a major social and environmental concern. Supply chain collaboration is foreseen as an enabler of food waste mitigation activities. This work investigates the extension of a risk mitigating collaboration initiative towards food waste reduction under uncertainty imposed by unprecedented disruptions such as the Covid-19 pandemic. A decision support framework is developed and validated under consideration of empirical input data from three grocery retailers in Europe. Collaboration-based investments in preservation, inventory records accuracy and continuous process improvement are assessed. Such investments in reducing the obsolescence rate can simultaneously lower supply chain costs per specific perishable product.
