Category systems are central components of institutional fields. In organization and management theory, however, the two literatures on market category dynamics and institutional change in fields have evolved mainly independently, with little cross-pollination. The historical study of Australian winemaking within the global wine field afforded us to combine the two literatures in a productive way. Neither of the them alone could help us to fully understand how and why the marginal field of Australian winemaking could make it to the center of the global wine field from ‘down under’ and, in the process, revolutionize the global market category system of wine. Our process model explains these outcomes by revealing the interplay of categorization and field evolution mechanisms. Different temporal dynamics in the interplay between mechanisms at the center and at the periphery were central in the process.
